Waking up to Turkey Tuesday

Oh school days and the morning rush to get out the door. Part of that morning rush is getting a good breakfast in the kiddos to start their day off right. There are many options out there for breakfast  but I try to keep things homemade as much as I can. I have begun to make my own freezer breakfasts. Quick, simple and delicious breakfasts that are made ahead of time and kept in the freezer  until ready to be warmed up for breakfast. This week with labor day the school week starts on Tuesday and my kid’s will be starting their school week with a great Turkey Tuesday recipe from Butterball. We love turkey in our house and it can be used in a variety of different ways. Turkey bacon is used in the recipe I am sharing today. You know it will be good, how can something with bacon be bad?

Turkey Bacon Breakfast Burrito

Step One. Fry up some beautiful Butterball turkey bacon. When done drain on paper towels, cool and then crumble and set aside.

Next you want some eggs. You will need a big bowl and 16 large eggs. Just crack them into the bowl and whisk up. Add to a preheated skillet and cook. Set aside when done.

The next step you can do a couple different ways. My way was to mix everything together. The eggs, beans, bacon and cheese. You could also layer. Completely up to you.

I prepared each breakfast burrito on a piece of plastic wrap that I rolled each burrito in.

After rolling the burrito up and wrapping in plastic wrap, I placed burrito’s in a ziploc freezer bad and labeled the bag.
To reheat just microwave 2 minutes or until done.
*please note not all microwaves cook the same, yours may reheat food faster or slower. Adjust accordingly.*

So there they are beautiful Turkey Bacon Breakfast Burrito’s! Don’t forget to top them with your favorite things like salsa, sour cream, avocado and even a sprinkle of cilantro.

Turkey Bacon Breakfast Burrito

3 tablespoons vegetable oil

1 (14 ounce) packageButterball® Turkey bacon, cooked and crumbled

16 large eggs

8 (10 inch) flour tortillas, warmed

1 (16 ounce) can seasoned chili beans, warmed

1 cup shredded Cheddar cheese

1 large avocado, halved, pitted, peeled, diced

1 cup chopped cilantro

2 cups salsa or pica de gallo

1 cup sour cream

  1. Heat oil in skillet over medium heat. Add eggs to skillet. Cook, pulling cooked portion to the center. Add bacon and continue cooking until eggs are firm. Remove from heat.
  2. To assemble burritos, evenly portion heated beans down center of each tortilla. Top beans with egg mixture, cheese, avocado and cilantro. Fold in opposite sides of each tortilla, and then roll up, burrito-style. Cut diagonally in half and serve with salsa and sour cream

A letter to my son’s teacher… Autism and my son

Every year my son’s new teacher’s ask what they need to know about my son. If it were only as simple as telling you a couple things to ensure a good school year. This year as my son enters middle school it scares me greatly. This year he has 7 different teachers that will need to learn to work together to figure out his educational needs. These are the years where he may fall through the cracks or may be be labeled as a problem child. Please do your part to ensure this does not happen and I will help you as much as I can.

My son has Autism and once again as I say those words I am asked by you what do you need to know. Unfortunately it is not a simple answer and to understand my son you need to get to know him.  Just reading his IEP will not tell his entire story just as my telling you about him does not either. I can tell you about him all day long but there is nothing I can say will guarantee he will have a good day or will not have a bad day/ meltdown.

Yes, he is different. His brain just works in a different way than other kids. When working with my son you will be pushed to think out of the box. No two children with Autism are the same so just because you knew another student with Autism does not mean what you did with them will work for my son.

My son thrives on routine, structure and consistency. Routine calms my son and reduces anxiety and without it he has problems. If there is going to be a break in routine you need to prepare him for it if you can. If you can’t just try to help him through the change. An example of change my son is not good with is substitute teachers.  An alternative plan needs to be in place for my son when he has a substitute teacher. My son needs structure, he needs to know the rules. Please be consistent with my child because when you are not it gives him mixed signals and it is difficult for him to comprehend what he is suppose to do.

My son interprets  what he is told one way, literally. He does not get idioms and the like. When speaking to him please get his attention and speak to him with plain, simple words.

Social skills are not my son’s strong point. My son is not disrespecting you by not looking you in the eyes/face. He may not be looking at you but he is usually listening. To get your point across please ask my son to repeat what you have asked. My son may do other things that are not socially acceptable such as pick his nose. If you catch him doing something please redirect him, he will stop. We have been working on personal space, he needs clear boundaries as he may invade others personal space not realizing what he is doing is rude.

While on the subject of social skills my son will say what he thinks and does not have a “filter” and will express his opinion. He will say something is dumb or stupid. Just as he will call someone fat or tell them their breath stinks. Please understand he is not saying things to be mean,cruel or disrespectful.

My son’s speech is a work in progress, please understand this. Sometimes especially when he is excited or upset it will be hard to understand him. If you do not understand him ask him to repeat what he has said. Be warned though, too many repeats may equal a meltdown.

My son communicates but you need to do more than just listen. You will need to watch his body language for cues. When he is anxious he will do a variety of things such as run back and forth, hum songs, twirl his hair, pick at his skin or other things. My son may even growl or loudly sigh when he is not excited about doing something. Watch him and he will show you how he is doing.

Group work is not a strong point. If he can do assignments independently he will. He may need redirection from time to time but he does best work solo. This goes back to social skills and interacting with his peers.

Handwriting is not a favorite thing for my son to do. It is hard for him and he does not have a traditional writing grip. Give my son a iPad, computer, alphasmart or other word processor and he can do it. He also does awesome power point presentations.

Your classroom is full of things that may throw my son into sensory overload which may lead to a melt down. His classroom size is larger than what he is used to. A larger class often means more noise and this can overwhelm him. Pep rallies and similar grade level functions are a nightmare for my son. He would rather stay in the classroom and do classwork. Other things that may overwhelm his senses include your classroom temperature, lighting and smells. He tries his best but sometimes it becomes to much and he can’t focus.

When over simulated my son will need a “time out”. He will need to go somewhere quiet to “cool off”. When he is not allowed to do so he may shut down and a melt down could happen. He has attempted to run away from school before. Please do not allow him to get to this point.

My son is very bright and typically learns new subjects easily. He also relates everything back to Mario and Sonic and other video games. If you listen to him though it often makes sense as odd as it may sound. Don’t hate the video games it is just another way my son communicates and expresses himself.

Our family does not use the word can’t so please do not use it in regards to my son such as you “can’t teach my son”. You can teach my son but you may need to rethink your methods. Look at his strengths, you will find a way. He can be taught.

Last but not least the most important thing to remember when teaching my son is to be patient.

What I have written is only a starting point for you. I could go on and on writing about him, he is an awesome kid and if you allow yourself you will learn about his greatness. I invite you to look at things through his perspective and learn how things are not always black and white.

Back to School Supplies Woes

It is that time of year, Back to School! This year my kiddos had an extra long summer thanks to our cross country move and are ready to go back to school. I wonder how long that is going to last.

With back to school comes school supplies and that is where my gripe is. I have no problem buying school supplies for my 4 children at all. I have no problem sending in extra stuff that teachers may need. I have no problem helping out friends of my kids. What I do have a problem with is how ridiculous some school supply lists have become.

I know teachers are underpaid. Once upon a time I wanted to be a teacher when I grew up. I still think I do, low pay and all. I know teachers pay for a lot of things out of pocket from classroom supplies to lunch for students here and there.  Guess what though this is true of other professions as well like my husband’s.  Yes, the Army doesn’t supply everything a soldier needs to train or deploy. I won’t even begin with some of the ridiculous things you would think his employer would provide but couldn’t because of budget constraints.

I can only guess that maybe these long school supply lists are due to budget cuts but i’m not sure. My children’s school district in El Paso put a budget cap on how much in supplies that they could request. Now that i’m in North Carolina there are no such caps and despite spreading out my shopping and price matching I am going broke shopping for supplies. My daughter’s list is the worst. Seriously 16 glue sticks, 4 packs of computer paper, 4 boxes of tissues, 8 tennis balls etc.  I can only guess those tennis balls are to put on the chair legs which in my opinion is not a necessity. It is a nice to have not a need to have. I can understand my son’s needing scientific calculators and even thumb drives. But tennis balls, clothespins, 4 boxes of tissues each child. What happened to one box per child and if more were needed asking for more? Doing something common sense like that is not only much easier on parent’s budgets but it saves room in your classroom. Seriously where are you going to store 4 boxes per student in your class and the paper towels, computer paper. Please don’t tell me this is done because it is communal supplies because some kids cannot afford school supplies. What is going to happen when one day parents have had enough and say no i’m not buying it.

I think some teachers have forgotten about who the parents of the children they teach are. They are people just like them doing their best to get by and do the best for their children too.  Most of us are not rich with unlimited resources. We don’t have someone helping us out. Yes, we know school supplies are needed every year but we don’t know what is going to be on that list typically until a month or so before school starts. It doesn’t help that so many items on school supply lists today are not actually school supplies. So you can only stock up so much in advance and then try to spread it out so it is not such a financial shock.

So I am going to ask the teachers out there please carefully review your school supply lists. Make sure things are classroom needs and not things that are wants because they would be nice to have. Maybe try out a classroom wish list for all of those things that are the nice to have’s like tennis balls for the chairs. The parents of your students would be thankful just like their wallets would be.

Chipotle Cheeseburgers and Fresh Produce from Gillis Hill Road Produce

 

 

I love fresh veggies and fruit and I love a good burger and I have both for you today! Now that I am back in North Carolina I cannot wait to get a garden started next spring but until then I will be frequenting some of my favorite local roadside produce stands. We may have been gone 7 years but my favorite produce stands are still there, especially Gillis Hill Road Produce. I stopped in for corn but they were sadly sold out but I couldn’t walk out empty handed.

Gillis Hill ProduceThese tomatoes are going to be perfect for the Chipotle Cheeseburgers.

For the green beens I cleaned them, snipped the ends and steamed them. The zucchini I sliced, drizzled with EVOO and sprinkled with sea salt and fresh ground pepper and baked at 350 for about 20 minutes. Simple easy and delicious!

This month with Allrecipes we are working with Goya products which I keep on hand. Although the recipe stated to use Goya specific products there were a few items I did sub with what I had on hand such as the mayonnaise.

I also cooked them up in an electric skillet/griddle instead of a grill.

And there you have it delicious fresh cantaloupe and veggies with Chipotle Cheeseburgers.

Ingredients

1/4 cup Goya Mayonnaise

1 chipotle pepper from a can of Goya Chipotle Peppers in Adobo Sauce, finely chopped

1/4 cup sauce from a can of Goya Chipotle Chiles in Adobo Sauce

3 tablespoons Goya Minced Garlic, divided

1 tablespoon finely chopped fresh cilantro

Goya Adobo All-Purpose Seasoning, to taste

2 pounds ground beef (80% lean)

1 teaspoon Goya Vegetable Oil

Your favorite condiments and buns

Directions

  1. In medium bowl, stir together mayonnaise, 1 tbsp. chipotle sauce, 1 tsp. garlic, cilantro and adobo; cover and refrigerate until ready to use.
  2. In large bowl, gently mix together beef, chopped chipotle, 3 tbsp. chipotle sauce, remaining garlic and adobo until combined. Divide meat into 6 portions; form into 1 inch-thick patties. (Take care not to over-handle meat or else it will toughen).
  3. Prepare grill to medium-high heat, grease with oil (or heat oil in medium skillet over medium-high heat). Cook burgers, flipping once, until charred and cooked to desired doneness (about 12 minutes total for medium rare). Add cheese to patties about 5 minutes before taking them off grill.
  4. To assemble, divide patties evenly among bottom buns; top with onion slice, tomato slice, lettuce and top bun spread with reserved chipotle mayonnaise.

Jello Patriotic Mini Fruit Tarts

This week I am down to only one kid so I decided what would be better than to  give my 13 year old some cooking lessons. His future wife will thank me.

Our plan was to make Jello Patriotic Mini Fruit Tarts. The recipe looked like a good beginner recipe for him. Plus I now had an excuse to finally bake something in my new kitchen.

I started out the recipe by using homemade pie crust.

To me there is just something about homemade pie crust.Phyllo and Puff pastry would also work well for the tart shells.

IMG_3292I used a circle cutter and and pressed each circle to fit into the mini muffin pan cups.

IMG_3296The shells took 10-12 minutes to bake up.

While the tart shells were baking my son prepared the tart filling and it couldn’t be easier. Vanilla instant pudding and 1 cup of milk are whisked together until they thicken up. It takes about 2 minutes.

The pudding color will be dark but don’t worry like my son did.

You still have to add Cool Whip. The color will lighten up.

IMG_3297See it lightens up. Once the Cool Whip is folded in to the pudding mix place the tart filling in a pastry bag and refrigerate. Once tart shells are done baking cool shells completely before filling.

When you are ready to serve your tarts top with fresh berries and Cool Whip. The recipe uses fresh blueberries and raspberries but I couldn’t find any decent looking ones at my local store so I opted for strawberries. We love strawberries in our house!

Jello Patriotic Mini Fruit Tarts  from Allrecipes.com

Ingredients

1 (14.1 ounce) package ready-to-use refrigerated pie crusts

  • 1 (3.4 ounce) package JELL-O Vanilla Flavor Instant Pudding
  • 1 cup cold milk
  • 1/2 cup thawed COOL WHIP Whipped Topping
  • 1 cup fresh raspberries
  • 1/2 cup fresh blueberries

       Directions

  1. Heat oven to 450 degrees F.
  2. Spray 24 mini muffin pan cups lightly with cooking spray. Cut each crust into 12 wedges. Press 1 wedge up and around inside of each prepared cup to form shell, pressing edges of dough together as necessary to completely cover bottom and side of cup. Bake 10 to 12 min. or until golden brown; cool slightly. Remove to wire racks; cool completely.
  3. Meanwhile, beat pudding mix and milk in medium bowl with whisk 2 min. Stir in COOL WHIP; spoon into resealable plastic bag. Refrigerate until tart shells are cooled.
  4. Cut off one bottom of corner of filling bag; use to fill tart shells. Top with berries just before serving.

Happy 2 year Blog-a-versary to me!

Wow I have been on WordPress for 2 years now.. Yes Country Girl Gourmet has been around much longer that. It is just hard to believe I made the switch to here only 2 years ago. Where does time go?  With that said Country Girl Gourmet just moved form El Paso,TX to Raeford,NC and I wanted to let everyone know that changes are coming as I adjust to life in North Carolina.
One of the bigger changes is that I will no longer be selling my yummy treats due to North Carolina’s Cottage Food Laws. I have dreams for my own brick and mortar shop down the road but all of that is on hold until we get settled. I will still be writing about food and sharing pictures in addition to writing more about things happening in my life.

I hope you keep reading and see what Country Girl Gourmet has to hold for the future!

mmm… Margarita!

Living in El Paso Texas one of my favorite things we have here is the abundance of authentic Mexican food. I honestly could not choose one food as my favorite. It is sad but I can’t. I order a combination plate every single time we go out for Mexican food. I love tacos, chili rellenos, tamales, enchiladas, carnitas, the refried beans and even the rice.

One thing I have noticed that pretty much stays the same is my drink order, a margarita! MMM…Margarita!

Strawberry Margarita’s too!

I would have to say the margarita is the classic go to drink of the borderland. Which makes sense, since the borderland is one of the places it is said the drink originated. To be exact it was believed to be first made just across the border in Juarez at Tommy’s Place Bar on July 4, 1945.

The drink is pretty easy to make and main ingredients include Tequila, Triple Sec and Lime but several different types of fruits/berries can be added to change it up. A good one to try if you can’t get to the borderland is Allrecipes Ultimate Frozen Strawberry Margarita.

Ultimate Frozen Strawberry Margarita

6oz tequila

2oz triple sec

8oz frozen strawberries in syrup

(fresh strawberries can be used and sweetened with sugar as needed.

4oz frozen limeade concentrate

Fill a blender with ice and crush. Pour in the tequila and triple sec. Add the strawberries and limeade. Blend for 30 seconds or until smooth. Serve in margarita glasses and enjoy!

So you want to get DIRTY!

Recently I completed my first mud run. It was a cool morning and the mud was cold and honestly I sadly didn’t get really muddy. Here are some of my best tips for a successful mud run!

1. Pick your teammates carefully. Running with someone you know is more fun than someone you meet the day of the run.

2. Weigh your options when picking your heat. We went for fresh “germ free” mud but that also meant out mud was pretty cold since it was only in the 40-50’s out. If we had chosen a heat later in the day the mud  would have been warmer. Those competed later in the day were covered in mud while those of us who competed first thing, not so much.

3. Exercise. Although many races have been simplified so anyone can do them it helps to be in good physical condition.

4. Make a plan. If you are part of a team decide beforehand if it is ok to break apart or if you are staying togethers. Sometimes teammates can get separated during obstacles. This happened with my team after our first obstacle and was how I ended up doing the mud run with someone I did not even know.

5.Dress accordingly. Leave the cotton at home and go for tight fighting spandex-y clothes. I chose to capri’s to protect my knees during obstacles but saw others wearing tight booty shorts. I chose a dry-fit shirt. When choosing the color of your clothes keep in mind you will be getting wet and your clothes may become see through. I ended up wearing a black tank under my shirt for that reason.

6.Skip the socks. They add to the squish factor especially if you choose cotton.

7. Don’t give yourself a pedicure the day before. The grit from the sand will wear down the polish.

8. Shoes.. there are a couple options here. You can wear old shoes and donate later or rinse and wash when you get home. I wore minimals and they were the perfect shoe for this. While my teammate complained of squishy shoes after a couple seconds out of the mud my shoes were fine. Double knot your shoes tightly. You will be stepping in mud and nothing is worse than losing a shoe.

9. Bring a change of clothes that you don’t mind getting mud on for after the race, cheap flip flops and a towels you don’t care if they get muddy. Rinsing the mud off afterward may not be an option. I was lucky enough to be able to rinse off but those in a couple heats after mine did not have that luxury. I was able to change by covering myself in a large towel  (beach towel). If you are unable to rinse off you will need the towels to cover the sets in your car.

10. Have fun!

So those are my tips for a successful mud run. I have my second mud run coming up in less than a month and I cannot wait!

Halloween in an Instant

Time has flown by and it’s that time of the year again, Fall! The weather is getting cooler, the leaves are changing color (well in most places) and it is time for the holiday season to start. I’m not talking about Christmas but Halloween!

October is full of fall festivals and different Halloween celebrations. Food is often involved too. There is so much that can be made to help celebrate the fall season.  An obvious choice is cupcakes and cakes like these yummy Harvest Pumpkin Cupcakes from Argo.

I made these tasty pumpkin cakes for my one son’s school’s Fall Carnival and they went fast! Pumpkin cupcakes are always a good call in the fall. They are also awesome with Caramel Frosting instead of cream cheese.

Not feeling like cake? How about these little gems?  Individual Pumpkin Pies.

Just note for the Individual Pumpkin Pies the vanilla wafer crust does become “soggy” instead of crust like. I am working on a solution for this and will let you know what I come up with.  Even with the soggy crust these babies went fast as well. They are oh so yummy. Perfect for fall festivals and classroom parties.

This Caramel Corn by Karo is extremely easy to make as well as addictive. I don’t think it lasted 24 hours in my house.

Looking for a little change to your Caramel Corn try Caramel Corn Treat Bags and add in your favorite treats, nut’s , candy, pretzels, whatever makes your tummy happy. This recipe will not disappoint and is sure to be a crowd pleaser at fall carnivals and in the classroom.

Growing up on Halloween my mom always made us chili for before we would go out. Having something warm and filling  before going out is perfect and I think I may have found our pre Halloween trick or treating meal, Argo’s Chicken and Corn Chowder. This soup is delicious and filling and my entire family loved it. The only way to make it better would be to add some potatoes. Try it out, it doesn’t disappoint.
