Recovery after Hurricane Matthew

On Saturday, October 8, Hurricane Matthew hit North Carolina. This is a fact that I cannot ignore. I cannot post blogs about food and other things I had planned without addressing the fact that I live in an area that is now entering the recovery stage from a natural disaster. The county I live in has been approved for support from FEMA. Our neighboring counties are in the same boat. I know those still without electricity, water, or both. Our communities are dealing with shortages of both fuel and food on top of everything else. When I see the pictures of areas that were hit much worse than my neighborhood, my heart breaks for those families. I am thankful that things were not worse for my family.

It’s October and that means Halloween! We LOVE Halloween in our house and all of the spooky things that come with it. From costumes and decorations right down to food and drinks. My kids are getting older, so my family’s days trick or treating are slowing coming to an end but that doesn’t mean our Halloween fun has to end. I still try to make Halloween special and fun for my boys. Special snacks and treats are definitely the way to the hearts and stomachs. Sweet treats like Ice Cream Floats are perfect for Halloween parties and fun.

Fake out Take out, Kung Pao Chicken

In the days before I was gluten free if I were to go out to eat my thoughts went to Mexican food or Chinese. Thankfully I still can eat Mexican food, just not everything but my days of stopping at Panda Express for a quick lunch are over. Most Chinese food has some form of gluten in it from a source most people would not expect, soy sauce. Thankfully though they make gluten free soy sauce so I can still have Chinese food, I just have to make it myself. For that reason, I am also thankful for the many recipes out there that let me have my favorites like, Kung Pao Chicken.

Training Miles: Run Holden Beach

A big part of getting ready for the Walt Disney World Marathon is submitting a Proof of Time for corral placement. Right now we are counting down the days until times need to be submitted by. We have 17 weeks until the marathon but only 3 weeks are left to submit proof of time. So like so many others I have carefully gone over what races are nearby and picked one to use as my proof of time. I chose Run Holden Beach, a 13.1 on Holden Beach, NC. I hope it will be good enough.

It doesn’t seem possible but it’s that time of the year again, Back to School. While many schools have already headed back there are many more that are enjoying their last days of summer break. My kids are in that later group. With under two weeks to go until school starts I have been trying to get thing  ready for when the kids go back to school. I’m not just talking about buying new clothes, school supplies, and fresh hair cuts either. We are slowly working at getting back to our school time schedule and figuring out things like what to eat for breakfast. My boys have all decided what they want but my daughter is another story. She changes what she eats every couple weeks it sometimes so I need a breakfast boredom buster for her so I’ve come up with some Easy Breakfast Fruit Pizzas.

Banana, Banana Pudding

Last summer my brother got married and while the reception food wasn’t your typical wedding reception food, it was a crowd pleaser. It was Smithfield’s Chicken and BBQ, a North Carolina classic. This meal also introduced my kids to a new food, banana pudding. Yes, banana pudding.

Almost like Grandma’s Zucchini Bread

 There are a few foods that remind me of my grandma, they were always the ones she had made and in the house when we would visit. One of those was Zucchini Bread.  I’m not even sure when my love of her zucchini bread began. I can tell you that after I got married my grandma sent me a handwritten copy of her recipe on an index card after I asked her for it and I still make the same recipe. Well, almost, I know make it gluten free and a wee bit healthier by subbing apple sauce for some of the oil. Even with my minor changes it taste just as good as her’s.

Backyard Barbecue Chicken

In my crazy life when I can make dinner quick and easy it is always a plus. When I can make dinner that is quick and easy and clean up is a breeze that is winning. While my kids are older and fully capable of cleaning up after dinner like I had to as a kid I have one issue. I can be a bit OCD with how things should be cleaned up. My cleaning OCD is bad. I am the person that re-cleans what someone else has just cleaned so it is done “right”. Yep, that is me. Although after making Backyard Barbecue Chicken I may let my family help clean up a little more because clean up is so easy.

Why I’m loving Pokemon Go

I know it’s been a hot minute since my last blog post. I have no excuse other than life took over. My running and weight loss, garden full of evil squash bugs, kids being out of school, getting them to their summer activities, catching up on doctor appointments and a mini trip to NY. I just haven’t figured out my routine that doesn’t involve falling asleep late at night while i’m trying to write. Now things have been made just bit more harder with Pokemon Go. Yes, now Pokemon Go. I am most definitely not a video game person. I played a few video games as a kid but outside of a few Atari games and Super Mario, I was never that interested. My kids have had multiple game systems over the years, a Xbox, Playstation’s and a Wii in addition to their hand held DS’s. Outside of Wii Sports and Cooking Mama I rarely played with them. The games on my phone, they are my kids. Facebook games, please don’t send me a request but Pokemon Go. I am in my thirties but all about it, it weird but good.
