It’s October and that means Halloween! We LOVE Halloween in our house and all of the spooky things that come with it. From costumes and decorations right down to food and drinks. My kids are getting older, so my family’s days trick or treating are slowing coming to an end but that doesn’t mean our Halloween fun has to end. I still try to make Halloween special and fun for my boys. Special snacks and treats are definitely the way to the hearts and stomachs. Protein Creamsicle Sherbet

For the past 6 weeks or so i’ve changed up my exercise routine. I’ve been forced to take a break from running and I was in an exercise funk thanks to of all things a toe injury. My husband suggested I start working out with him and our 15 year old so I have; I am back to lifting weights consistently. I hate to admit it but I hadn’t been consistent with my strength training in a while. I have barely done it since my car accident but I am back and I am doing good. In the just over 6 weeks I have been back at it i’ve made some great gains.

With my running I have always pondered adding a protein supplement to my diet. Now that I am lifting on a regular basis again (and plan to continue when I start running again) I am thinking more and more that it is a need. I have protein now to try, YAY! I am ready to try it out but I was also thinking, how can I make this protein drink even better? Yes, EAS AdvantEdge Carb Control is tasty by itself but my mind was thinking about turning it into a frozen treat so I did! I created Protein Creamsicle Sherbet and it was not only super easy to make but it makes the perfect post workout cold snack.

Making Protein Creamsicle Sherbet is actually pretty simple. You only need a few ingredients. One Vanilla EAS AdvantEdge Carb Control drink, an orange, orange juice, honey, vanilla and a wee bit of salt.

You start by pouring your vanilla EAS AdvantEdge Carb Control drink in a bowl and adding to it the zest of one orange.

I then drizzle in Vanilla Bean Paste. Vanilla Extract can be used but I prefer the paste and all the beautiful vanilla bean specks.

I continue adding all my ingredients and whisk them all up. Once whisked up I transfer to a tupperware container and refrigerate overnight. This is a good time to place your ice cream maker in the freezer, if needed.

The next day I set up my Kitchen Aide Ice Cream Maker and got it ready to make some sherbet. It took about 15-20 minutes until I had some soft serve consistency sherbet.

I then placed the sherbet in an freezer safe container and into the freezer to allow it firm up a bit more.

I was impatient though, I wanted to try some out. So after a couple hours I pulled it out to serve some up.

So I scooped myself up a small bowl.

A easy to make low carb protein filled vanilla orange sherbet
Ingredients
  • 1 11oz French Vanilla EAS AdvantEdge Carb Control Shake ( or 1½ cups of protein shake)
  • ⅓ cup Honey
  • zest of one orange
  • 2 cups Orange Juice (fresh or bottled not from concentrate)
  • 1 teaspoon vanilla extract (or paste)
  • ¼ teaspoon sea salt
Instructions
  1. In a large bowl combine EAS AdvantEdge Carb Control Shake, Orange Zest, Vanilla, Honey, Orange Juice and Salt and mix well with a whisk.
  2. Transfer to a large bowl; cover. Refrigerate overnight.
  3. Freeze in a 4 to 5 quart ice cream maker according to manufacturer's directions. Transfer sherbet to a lidded freezer safe container, and freeze for 4 hours.

Honey Vanilla Ice Cream

You scream, I scream, we all scream for ice cream! I love ice cream, it is probably one of my favorite foods. It is all too easy to pick some up from the store to bring home for a treat. My kids love it when we pick up some and do your own sundaes. Having ice cream as a bed time snack and making toad stew is a favorite memory of mine from my grandma’s. She always had plenty of Schwan’s ice cream at her house. I am sure the memories of my grandma only add to my love of ice cream.

Unfortunately for me though going to the store and just picking out ice cream is no longer an easy task. Finding ice creams that I can eat that are gluten free is generally easy. I am allergic to coconut and that is where I have problems now. Coconut Oil is appearing in more and more products and sometimes it appears suddenly in a product we have eaten for years after  making a product new and improved. Ice cream is now one of those products that for whatever reason often has coconut oil in it. Between being gluten free and my coconut allergy, I am now a pro at reading labels.

So yes, I am one of those people that while they are grocery shopping that is examining labels. I have to or else I am stuck with an itchy and sometimes swollen feeling throat, hives and whatever else. Food allergies and intolerance’s aren’t fun.

In all of my reading of labels I have been puzzled by some labels of what would be thought to be rather simple foods like ice cream. I understand there are some preservatives in there and then there are thickeners but food coloring for vanilla ice cream, huh?  I’m not Food Babe and have no desire to be like her but I do have to question some things that are being put in the food that we buy. Plus we are talking about ice cream, isn’t it suppose to be basically milk, cream and sugar?

I am thankful that I can cook and make things so that I know exactly what ingredients are in the things that I am eating.  After finally putting the drum of my ice cream maker in my deep freezer I think I will be making more ice cream at home. Cost wise it is about the same to make a batch of ice cream  as it is to buy some brands. Ice Cream really isn’t that hard to make. It just takes a little time but it is worth it in the end.

I just discovered a great recipe for a honey vanilla ice cream that I think will be my new go to. It is made with honey and brown sugar instead of  white sugar creating a beautiful taste profile. It is a deeper vanilla ice cream flavor. It is smooth and creamy too! It was so much better than anything you can buy in the store and easy to make too. It was an easy process of simmering milk and then slowly adding the milk to the egg yolk, brown sugar and honey and touch of salt. Once you temper the milk and egg mixture you put it back on the stove and cook until it coats a spoon. Remove it from the heat and add your cream and vanilla extract and throw the ice cream mix in the fridge to cool for a few hours. I like to do this part at night so in the morning my ice cream is ready to churn. Once you churn it you can eat it right away or you can place it in the freezer and let it harden up. After churning in my Kitchen Aid mine was like a soft serve consistency so I put mine in containers and froze for later. Freezing allowed it to harden up and make it perfectly scoopable.  My family loved this ice cream plain and with caramel and/or chocolate. It is sadly all gone and my kids keep begging to make more. With simple ingredients I think I can make that happen for them.

Honey Vanilla Ice Cream

Ingredients

  • 2 cups milk
  • 1 (7 inch) vanilla bean, split lengthwise
  • 6 egg yolks
  • 1 cup packed brown sugar
  • 3 tablespoons honey
  • 1/4 teaspoon salt
  • 2 cups heavy cream

Directions

  1. In a medium pan, heat the milk and vanilla bean to simmering. Do not boil. In a mixing bowl, whisk together the egg yolks, brown sugar, honey, and salt until light colored and frothy. While whisking constantly, slowly combine the hot milk with the egg mixture. Transfer the mixture back to the sauce pan. Cook over medium heat until mixture reaches 180 degrees Fahrenheit (82 degrees Celsius) when tested with a candy thermometer, or becomes thick enough to coat the back of a metal spoon. Remove from heat.
  2. Remove the vanilla bean from the mixture and reserve. Strain custard into a large bowl. Scrape seeds from the vanilla bean into the custard. (Vanilla bean pod may be used again.) Stir the heavy cream into the custard. Cover the surface of the custard with plastic wrap and refrigerate for 4 hours.
  3. When cold, freeze in an ice cream maker according to the manufacturer’s directions.

NOTE-

You can substitute 1 tablespoon pure vanilla extract if you don’t have a vanilla bean in your pantry. Add the vanilla extract to the custard mixture with the heavy cream.

Salted Caramel Sauce

 

 

 

On day 4 of my Homemade Christmas I have Salted Caramel Sauce. Salted Caramel is one of my favorite things. You can use it in a variety of ways from topping ice cream to dipping apples. I would eat it every day if I knew I could get away with it. I think anyone would love the gift of this homemade salted caramel sauce.

Salted caramel sauce has simple, basic ingredients. All you need is sugar, butter, cream and salt of course. You will also need a nice heavy pan to cook the caramel in.  The most important thing you need is patience. Salted caramel sauce is a delicate process and you really need to pay attention to your sugar because the moment you don’t it will burn.  First not all stoves cook the same. Some cook hotter than others and if yours cooks hot you will need to lower your cooking temperature. While candy thermometers are typically helpful this is a process you need to watch not measure the temperature. You need to watch the color and wait for it to develop into an amber color and look for “smoke”. The second you see the “smoke” remove from the heat. If you allow your sugar to boil you have gone too far. Then you add your butter and cream and salt and voila! You have Salted Caramel Sauce! Pour it into a jar and decorate with a ribbon and a tag  and you have an awesome gift.

Salted Caramel Sauce

Ingredients

  • 1 cup white sugar
  • 5 tablespoons butter, cut into slices
  • 1/2 cup heavy cream
  • 1 tablespoon heavy whipping cream
  • 1 pinch sea salt to taste

Directions

1. Place sugar in a heavy-bottomed saucepan set over medium-high heat. Stir continuously until sugar begins to melt. Continue stirring until the sugar melts completely, begins to darken and all the chunks are dissolved, about 10 minutes. Stop stirring and continue to cook until the sugar begins to smoke and turns a dark shade of amber, 3 to 8 minutes. Remove from heat and wait 30 seconds.

2.Whisk in butter until melted and combined. Slowly pour in 1/2 cup plus 1 tablespoon cream, taking care because it can bubble over. Sprinkle in salt and stir to combine. Transfer sauce to a jar and cool completely before refrigerating.
